Tonight for dinner I made my mother's taco soup recipe. She has been making this soup for her grandchildren for years. And she made up this recipe herself, as far as I know. I was eager to give it a try as it is easy and I know my children like it. Here's the recipe:1 pound lean ground turkey or beef
1 onion, finely chopped
1 large bell pepper, finely chopped
1 28 oz. can diced tomatoes
1 28 oz. can crushed tomatoes
1 15 oz. can black beans, drained (Beans can be pureed before adding to the soup.)
2 cups frozen whole kernel corn (optional)
1 1 oz. taco seasoning mix (I use low the sodium one.)
In a large boiler brown meat with onion and bell pepper. Add the remaining ingredients. If you would like for it to be thick and stew-like, leave it like this. If you prefer a thinner, soup-like consistency add 2 cups of water before boiling. Bring to a boil and then simmer for 40 minutes.
Makes about 12 generous servings.
